Vacuum-Cooked Tiger Prawn Salad on Mix of Avocado, Radish Wafers and Crispy Bread

Ingredients: 1 portion

Preparation

Start by making 3 preparations of the avocado: cut one part into slices; one part into cubes; crush the rest and season with extra virgin olive oil, the juice from half a lime, salt and pepper.
Open the bag of tiger prawns and marinate with some lime zest, salt and pepper to taste.
Place the avocado slices on the plate first, then the purée, then the tiger prawns on top of this. Decorate with thin slices of radish, the avocado cubes, dill, rose petals and a slice of crunchy bread. Complete with a drizzle of extra virgin olive oil and a sprinkling of pepper.
